Vegetable Soup

 “For many EIP students who are new to Canada, Ottawa winters can be cold and harsh. I like to make soup in the winter so that I have a nice hot meal when I come in from being outside in the cold weather. This is an easy recipe that is really delicious. I hope you enjoy it! 3 large carrots

2-3 large onions

1 tablespoon ground ginger

1 litre chicken or vegetable broth

1 chicken or vegetable bouillon cube


1 tablespoon butter

Salt and pepper


1.Heat a large pot and melt the butter (you can also use oil).

2.Peel carrots and onions and chop them into small (bite-sized) sections.

3.Put the vegetables, ginger, salt and pepper in the pot and stir (at medium-high heat) until soft.

4.Pour the broth over the vegetables.

5.Crumble the boullion cube into the mixture and fill the pot (to almost full) with water.

6.Turn the heat to low, and let simmer for 2-3 hours. (The longer you leave it, the tastier it gets!).
